Cereal grasses of wheat, alfalfa, barley, oat or a combination of these grasses are used as herbal medicines due to their therapeutic and nutritional properties. Wheat seedlings collected after six to ten days of germination are called wheat grass. Wheat grass contains a variety of nutrients including vitamins, proteins, minerals, and carbohydrates. In present study, the nutraceutical profile of Wheat-grass Juice Lyophilized Powder (WJLP) from different colored wheat lines (black, blue and purple) is evaluated and compared with the white wheat. Wheat-grass juice nutraceutical potential was identified in the current study through high chlorophyll content (0.3%), high protein content (20%), essential amino acid index (EAAI) (86%), high potassium (K) (RDA contribution 11.6%) and antioxidant activity.
